It’s time for option 1, all in the kitchen!
Mini cherry pies without added sugar:
- 1 cup of rolled oats
- ½ cup of almond flour
- 4 dates soaked in water since the day before
- 4 tablespoons of coconut oil
- 1 large handful of cherries
- 1 vegan coconut yogurt
- dark chocolate
- a little grated coconut (optional)
For the base, mix together the oatmeal in the food processor until lightly crushed then add the almond flour, drained dates and coconut oil. Mix again at medium speed until you obtain a homogeneous and sticky mixture.
Place in metal molds greased with coconut oil and press down well with your fingers to give the shape of the mold.
Bake them at 150ºC for 10 minutes in a preheated oven.
Let them cool before unmolding.
In a bowl, pit the cherries and mash them coarsely with a fork.
Fill the tarts with the coconut yogurt and arrange the crushed cherries, bake again in
170ºC this time for another 10 minutes!
Take out of the oven, once cooled, decorate your mini tarts with a drizzle of melted chocolate and grated coconut
