You may already know that as a mom-to-be, you need to change your eating habits. Between prohibited foods and preferred cooking methods, it’s not always easy to navigate. We wonder what about the eggs and their cooking? Well, a pregnant woman can, and even should, eat eggs because it is an exceptional food. It is rich in proteins, trace elements (iron, iodine, zinc), and vitamins. Eating 2 eggs can cover at least 20% of the daily requirement for all of these elements. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
When you are pregnant, take them fresh and extra-fresh, as with this great recipe for small creams: Creams with eggs, citrus fruits and spices ⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS: ⠀⠀
⠀⠀
3 oranges or 4 mandarins or a mixture of 2⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 very fresh eggs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
50 g of whole cane sugar ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of cornflour ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon ground cinnamon ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cloves ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 pinch of salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Squeeze the juice from the oranges / mandarins and lemon. Filter it to remove the pulp. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a bowl, mix the egg yolks with the sugar until the mixture foams and incorporate the cornstarch and cinnamon. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Gently heat the citrus juice with the cloves (cut as soon as the first bubbles appear) then pour it over the egg yolks, whisking constantly. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Put everything back on the heat and let heat until the first bubble. Remove from the heat and let cool (remove the cloves). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
During this time, beat the egg whites with a pinch of salt then gently incorporate them into the preparation. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour the resulting mixture into small bowls or ramekins and refrigerate for at least 3 hours. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
When ready to serve, sprinkle with cinnamon and enjoy!
