For about 10 small crackers: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
200 g precooked chickpeas, rinsed and drained ⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ garlic clove ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 large handful of oatmeal or gluten-free oatmeal ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp of freshly squeezed lemon juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cases. extra virgin organic olive oil + a little for cooking ⠀⠀⠀⠀⠀⠀⠀⠀⠀

In a food processor, pour all the ingredients and mix everything at maximum speed until you obtain a dough with a very smooth and homogeneous texture. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat your oven to 180 ° C on rotating heat. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
On a baking sheet, garnish with a sheet of parchment or silicone paper (it’s even better for nature), coat it with olive oil using a kitchen brush. Now roll out the dough and press down well with your hands until it is about 5mm thick. Brush the top again with a little olive oil with the brush. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Then using the tip of a large knife, mark with a light line in the dough, the rectangular shapes of your crackers. Not too big – about 5-6cm long and 3cm wide. This will make slicing easier after baking is complete and prevent the edges of the crackers from crumbling. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bake everything for 10 to 13 minutes, watching the cooking, the outside should be golden brown, but the inside still soft.
